Bakery Manager

About the role

Tulips n Lilies Confectionery is looking for a Bakery Manager in Ibadan and Oyo State, Nigeria. The role covers production planning, quality control, team leadership, inventory coordination, cost control and food safety, working closely with Sales, Operations, Inventory, Procurement, Finance and Dispatch.

Key responsibilities

• Plan and run daily production based on customer orders and sales forecasts, coordinating with Sales and Operations to meet targets and deadlines.
• Ensure products meet approved standards for taste, appearance, consistency, portion size, freshness and packaging, and fix defects and complaints.
• Lead, supervise and develop bakers, cake decorators and production assistants, setting clear expectations and maintaining discipline and teamwork.
• Work with the Inventory Officer on stock levels, replenishment, storage, rotation and usage records, and raise procurement requests.
• Monitor ingredient consumption, spoilage and wastage, and take steps to reduce waste and control costs.
• Enforce food safety, sanitation and hygiene, and keep equipment, utensils and production areas clean and maintained.
• Establish standard operating procedures, improve processes and turnaround time, and coordinate preventive maintenance of equipment.
• Submit daily production reports and periodic summaries, tracking output, defects, wastage, stock usage and staff performance.

Required profile

• Relevant experience in bakery operations, pastry production, confectionery or food manufacturing.
• Demonstrable experience managing production staff, schedules, quality standards and operational targets.
• Proven managerial experience supervising bakery or food production teams is an added advantage.
• Strong planning, problem-solving, communication and reporting skills; evidence of achievements is an advantage.
