Head of Pastry

About the role

Chester Fries is looking for a Head of Pastry in Abuja to lead its pastry department. The role covers the production, quality and training of pastries, cakes, desserts and baked goods, ensuring they meet the restaurant's standards.

Key responsibilities

• Prepare and supervise the production of pastries, cakes, desserts and baked products, planning daily output so products are available when needed.
• Ensure accurate measurements, consistent recipes and appropriate portion sizes, and keep production records and reports on stock usage, wastage and performance.
• Supervise and train pastry staff on baking techniques, recipes, cake decoration, food handling and presentation.
• Monitor ingredient usage and stock levels, minimise wastage and prevent spoilage.
• Maintain cleanliness, food safety and sanitation, and ensure proper storage of ingredients and finished products.
• Keep baking equipment, utensils and tools clean and well maintained.
• Develop new products and improve existing recipes, and ensure compliance with the restaurant's policies and quality standards.

Required profile

• Extensive knowledge of pastries, cakes, desserts and baked products, with the ability to prepare them independently.
• Competence in sponge, chocolate, fruit, red velvet and other cakes, and in pastries such as meat pies, chicken pies, sausage rolls, doughnuts, puff-puff, croissants, cookies and cupcakes.
• Understanding of baking methods, ingredient measurements, mixing techniques and temperatures.
• Knowledge of creams, fillings, toppings and pastry sauces, and of recipe development, standardisation and portion control.

Required skills

• Cake decoration, frosting, icing, filling and finishing.
• Operation and maintenance of ovens, mixers and other pastry tools.
