Commercial Bread Baker

About the role

We are seeking a Commercial Bread Baker to join our bakery team in Lagos. You will be responsible for producing a variety of breads, pastries and cakes while maintaining high standards of quality and hygiene.

Key responsibilities

• Prepare and bake bread, pastries, cakes and other items following standard recipes.
• Measure, mix and handle ingredients accurately, operating ovens, mixers and related equipment.
• Ensure recipe compliance, consistency of taste, size and appearance, adjusting temperature, timing and humidity as needed.
• Mix, knead, ferment and proof dough, monitoring stages to achieve desired texture and flavor.
• Inspect raw materials and finished products for quality, rejecting substandard items.
• Maintain strict cleanliness and adhere to food safety and hygiene regulations.
• Monitor ingredient usage, report shortages and minimize waste.
• Collaborate with the Head/Lead Baker and kitchen staff, assisting in training junior bakers.

Required profile

• Strong knowledge of baking techniques and ingredients.
• Attention to detail and ability to maintain consistency.
• Capability to work early hours and handle pressure.
• Good time management and physical stamina.
